3 Cooling Cocktails For An Aussie Christmas

It’s approaching the most wonderful time of the year, full of parties, friends and family. What could be better than an Aussie summer Christmas spent by the beach or pool with a cocktail in hand? Here is a list of our 3 favourite Christmas cocktails sure to keep you cool this festive season.


1. Caramelised Pineapple and Passionfruit Punch


Escape the heat of an Aussie summer Christmas with this rum, pineapple and passionfruit punch. This punchbowl gives a fruity twist to the traditional dark and stormy, and is sure to be a crowd pleaser. Recipe from Delicious.


Ingredients (Serves 15):

  • ½ cup (125ml) honey
  • ¾ ripe pineapple, peeled and chopped
  • 2 cups (500ml) dark rum.
  • Ice cubes
  • 6 cups (1.5L) ginger beer
  • Dried pineapple rings, mint sprigs and halved passion fruits, to serve.


Method:


1. Place honey in a large fry pan over a medium heat and bring to a simmer for 2-3 minutes, or until lightly caramelised.


2. Add pineapple and cook, stirring occasionally for 15 minutes or until lightly caramelised. Cool completely, then place in a blender with rum and blitz to a puree.


3. Fill a punch bowl with ice. Strain pineapple puree through a fine sieve into punch bowl and stir through ginger beer.


4. Garnish with dried pineapple, mint and passionfruit.

2. Cranberry Gin Fizz


If you’re after a drink that tastes as good as it looks, then this Cranberry Gin Fizz is for you! This cocktail will fit right in with your Christmas decor with its red and green colours and is sure to be a refreshing treat alongside Christmas lunch. Recipe from Country Living.


Ingredients (Serves 2):


  • For the cranberry syrup:
    • ½ cup cranberries
    • ¾ cup granulated sugar
    • ¾ cup water
    • 4 Sprigs fresh thyme


  • For the Cocktail:
    • 60ml Gin
    • 20ml Cranberry syrup
    • 20ml Fresh lemon juice
    • 15ml Elderflower liqueur
    • Ice
    • Club soda
    • Fresh cranberries, to garnish
    • 2 Sprigs fresh thyme, to garnish


Method:


1. Make the cranberry syrup: Simmer cranberries, granulated sugar and water in a small saucepan over medium heat until sugar dissolves and cranberries break down, roughly 10-12 minutes. Stir in 4 sprigs of fresh thyme. Cool to room temperature. Strain and discard solids.


2. Make the cocktail: Combine gin, cranberry syrup, fresh lemon juice, elderflower liqueur and ice in a cocktail shaker. Shake until chilled and strain into 2 glasses. Top with ice and club soda. Garnish each drink with fresh cranberries and 1 sprig fresh thyme.

3. Peach and Mango Bellini Punch


If you’re after a drink that tastes like summer in a cocktail, then this Peach and Mango Bellini Punch is the answer. This punch combines sweet peaches and mango with a bottle of prosecco to create a delicious summer cocktail perfect for sipping by the pool. Recipe from Taste.


Ingredients (Serves 8):

  • 3 Small yellow peaches
  • ½ cup mango nectar
  • ¼ cup peach schnapps
  • 3 cups ice cubes
  • 750ml Bottle of prosecco, chilled
  • 1 cup chilled soda water


Method:


1. Peel and roughly chop 2 peaches. Place chopped peach in a food processor, Process until smooth.


2. Place peach puree, mango nectar and peach schnapps in a 1.5 litre capacity jug. Stir to combine.

 

3. Halve and thinly slice the remaining peach. Add peach slices and ice cubes to jug. Top up with prosecco and soda water. Stir to combine. Serve.
